Tuna salad in puff pastry — no doubt this recipe is new to you... :)
Ingredients
- 1 can tuna
- 1 cup chopped romaine lettuce (or regular lettuce or cabbage)
- 1 cup canned corn
- 1/2 cup grated carrot
- 1/2 cup shredded red cabbage
- 1/2 cup pickled cucumber or pickled turnip
- 1/4 cup pickled hot peppers — optional
- Hot chili sauce — optional
- 2 tablespoons mayonnaise
- A pinch of salt
- Juice of a small lemon
- Ready-made puff pastry shells
Method
- Finely chop the lettuce, cabbage, pickles and hot peppers.
- Add the grated carrot, corn and tuna to the chopped vegetables, then add the mayonnaise, salt and lemon juice and mix well. You can also add hot chili sauce to taste.
- Spoon the mixture into the pre-baked ready-made puff pastry shells.
- Serve the tuna salad in puff pastry chilled.
