Tripoli-Style Falafel Recipe

Falafel is one of the most delicious old Arab recipes. Some people make it with chickpeas, others with fava beans, and it is delicious either way, especially with tahini sauce, tomato slices, and pickles in an Arabic bread sandwich!
Here is how to make falafel the way the people of Tripoli in northern Lebanon prepare it!
Ingredients
- Half a kilo of chickpeas, soaked overnight
- A bunch of coriander
- 5 cloves of garlic
- One dry onion
- 1 tablespoon falafel spices
- Half a tablespoon dried coriander
- Half a tablespoon cumin
- Half a teaspoon baking soda
- Salt
- 2 tablespoons yogurt
- 2 tablespoons sesame seeds
Method
- Drain the chickpeas very well and grind them in a falafel grinder with the onion, garlic, and coriander until you get a smooth dough
- Add the remaining ingredients except the baking soda and mix well
- Add the baking soda only five minutes before frying and mix well
- Heat plenty of oil, shape the patties using the special shaping tool, and drop them into the pan with space between each one until golden or browned
- Serve the falafel immediately with pickles, tahini sauce, and vegetables
- Note: Tripoli-style falafel does not contain fava beans or potatoes
- Yogurt is important for the taste and texture of the falafel because it helps the patties puff up
