  • 500 g tender meat, cut into pieces
  • 2 eggplants, sliced into rounds
  • 3 tomatoes, chopped
  • 1 onion, chopped
  • 2 hot peppers
  • 2 carrots, sliced into rounds
  • 5 garlic cloves
  • 1 can tomato paste
  • Vegetable oil
  • A pinch of salt
  • Black pepper
  • Cumin
  • Meat spices
  • Black and green olives
  • Hot pepper, to taste
  • Dough made from: 1/2 cup flour, a pinch of salt, and water

Method

  1. Heat oil in a pan and begin by frying the eggplant, then the carrots, then the peppers and garlic, or lightly sauté them to reduce oil absorption, according to preference..
  2. In a second pan, sauté the onion until soft, then add the meat with the spices and salt and cook, stirring, for 5 minutes...
  3. Prepare the tajine: start by arranging the carrots and garlic in an ovenproof dish, then add the eggplant and peppers and some chopped tomatoes, then the meat, then another layer of eggplant and tomatoes and 1 cup of tomato paste mixed with water.
  4. Scatter black and green olives over the top of the eggplant and vegetables.
  5. Seal the tajine with dough, crimp it well, brush with butter and drizzle a little oil on top, then sprinkle with sesame seeds.
  6. Bake the eggplant tajine in the middle rack of the oven at 180°C for 1 hour.
