Lebanese fattoush.. one of the tastiest salads of all, especially when the bread is fried.. and it can also be toasted
Ingredients
- Parsley
- Lettuce
- Red cabbage
- White cabbage
- Tomatoes
- Cucumber
- Radish
- Green onions
- Sweet green pepper
- Fresh mint
- Purslane
- Fresh thyme
- The dressing:
- Lemon
- Dried mint
- Olive oil
- Sumac
- Pomegranate molasses
- Fried bread for topping
Method
- Wash the vegetables well, then drain them well
- Chop the leafy vegetables or tear them by hand. Slice the cabbage into thin strips, roughly chop the lettuce and green onions, and dice the tomatoes, cucumber, and pepper
- Mix the vegetables together
- Prepare the dressing separately by mixing all its ingredients, then pour it over the vegetables just before serving and toss the fattoush
- Cut the bread lengthwise or into cubes, or shape it as desired, then fry it in plenty of oil for just a few seconds until golden
- Top the fattoush with the fried bread and serve
