Ingredients

  • 6 chicken pieces, bone-in
  • Salt
  • Chicken seasoning
  • 1 teaspoon thyme
  • 1 teaspoon rosemary
  • 1 tablespoon paprika (sweet ground red pepper)
  • 1 teaspoon curry powder
  • Juice of 2 lemons
  • Black pepper
  • 1/4 teaspoon ground ginger
  • 1/4 cup oil
  • 5 garlic cloves, sliced
  • 4 tablespoons tomato paste
  • 1 cup yogurt
  • 3 cardamom pods, crushed

Method

  1. In a baking tray, mix all the spices with the oil and season the chicken well under and over the skin.
  2. Then arrange the chicken in the tray and refrigerate the marinated chicken for at least 6 hours.

  3. Cover the tray with foil, make small slits with a knife, and place the tray in the oven for about an hour until nicely browned.
  4. The chicken can also be grilled over charcoal or on an electric grill.
  5. Serve the grilled, seasoned chicken with tabbouleh and French fries.
