Ingredients

  • 2 cups coarse semolina
  • 1 cup shredded coconut - optional
  • 1 cup sugar
  • 1/2 cup liquid milk
  • 1/2 cup animal ghee - can be substituted with butter
  • 1/4 cup syrup
  • 1 teaspoon baking soda

Method

  1. Start by mixing the ghee with the liquid milk and the syrup (shīra), then place the mixture over heat for a few minutes until it becomes lukewarm...
  2. Mix the coarse semolina with the sugar and baking soda
  3. Add the ghee, milk and syrup mixture and stir with a wooden spoon until you have a homogeneous mixture...
  4. Grease a suitable baking pan with tahini or line it with parchment paper, pour the namoura batter into the pan and decorate as desired
  5. Place the namoura pan in the preheated oven and bake at 200 degrees with heat from the bottom
  6. When the edges of the namoura brown, switch to browning the top
  7. Remove the namoura pan from the oven and pour the hot syrup over it immediately, then set it aside until completely cool
  8. It is preferable to place the namoura pan in the refrigerator until it sets well before cutting
