Ingredients
- 2 cups flour
- 1 cup fine semolina
- 1 tablespoon cornstarch
- 1 teaspoon yeast
- 2 tablespoons sugar
- 2 tablespoons powdered milk
- 1 teaspoon baking soda
- 3 cups warm water
- Walnut Filling:
- Half a cup chopped walnuts
- 1 tablespoon shredded coconut
- Half a teaspoon ground cinnamon
- 2 tablespoons syrup or honey
- 1 teaspoon rose water
- Mix everything together and fill the qatayef.

Method
- In a bowl, place all the dry ingredients and mix them well.
- Add the water over the dry ingredients and blend with an electric mixer until combined, then let rest for 10 minutes.Timers: 10 min
- After proofing, mix the batter again with a spoon and, if desired, add flavorings such as vanilla or orange blossom water.
- In a nonstick pan, place it over high heat. Once hot, start pouring the qatayef batter, one piece at a time.
- When the surface of a qatayef piece dries, after about 1.5 minutes, remove it from the heat and place it on a clean towel, then cover it so it does not dry out and become hard.Timers: 5 min
- When we notice the pan has become hot, lower the heat again.
- Fill the qatayef with ashta, sweet cheese, or walnut filling as desired.
- You can fry the qatayef in plenty of oil, then drop them into cold syrup for 2 minutes.Timers: 2 min
- You can also bake the qatayef by greasing a tray with oil, placing the qatayef on it, brushing them with a little butter or ghee, and broiling them from above on both sides at 200 degrees until golden.
