Taco stew with ground beef and red beans is an inventive recipe using ingredients found in every kitchen! Try it as a change from traditional stews.
Ingredients
- Ground beef
- 2 medium potatoes
- 1 cup cooked red beans (kidney beans)
- 4 garlic cloves
- A bunch of fresh cilantro
- 1 tablespoon dried cilantro
- Salt
- A packet of ready-made taco seasoning or: seven-spice mix, cinnamon, ground cumin, paprika, garlic powder, onion powder
- 3 cups cooking tomato juice or passata
Method
- First, fry the ground beef in a little vegetable oil until cooked. Add the packet of taco seasoning or the spice mix (seven-spice, ground cumin, cinnamon, paprika).
- Meanwhile, rinse and boil the red beans until tender.
- In a somewhat deep pot, sauté the crushed garlic, then add the chopped fresh cilantro.
- Add the cooked meat and sauté for a few minutes with the garlic and cilantro.
- Add the cooked red beans, then stir in the dried cilantro and salt.
- Dice the potatoes into small cubes. Place them in the microwave for a few minutes until slightly tender.
- Add the potatoes to the meat and bean mixture and mix well.
- Add the tomato sauce or crushed fresh tomatoes.
- Bring the taco stew to a gentle single boil; when the tomato sauce thickens slightly, let it cook a few more minutes, then turn off the heat.
- Serve the taco stew of ground beef and red beans with white rice or rice with vermicelli.
