1 1/2 cups all‑purpose flour

2/3 cup unsweetened cocoa powder

1 tsp baking powder

1/4 tsp salt

1/2 cup butter

3/4 cup granulated sugar

1/2 cup packed brown sugar

3 eggs

1 tsp vanilla extract

1 1/2 cups powdered (icing) sugar, sifted — for coating

In a bowl, whisk together the flour, cocoa, baking powder and salt until combined.

In another bowl, beat the butter with the granulated sugar until creamy, then add the brown sugar and beat until light and fluffy.

Add the eggs one at a time, beating after each addition, then mix in the vanilla.

Fold the flour mixture into the butter mixture with a spatula until just combined.

Chill the dough in the refrigerator for 10 minutes.

Using a teaspoon, scoop small balls of dough, roll each in the sifted powdered sugar, and place on a baking sheet lined with parchment paper.

Place the baking sheet in a preheated oven at 175°C (347°F) and bake for about 10 minutes.

When baking is done, let the cookies rest at room temperature for about 5 minutes before removing.
