Ingredients
- 1 kilo flour
- 2 tablespoons sugar
- 1 tablespoon yeast
- A pinch of salt
- 3 cups warm milk (or as needed), or powdered milk dissolved in the same amount of warm water
- 2 tablespoons yogurt
- 1/4 cup oil
- 1 egg
- 2 tablespoons finely ground dried thyme (used for manakish)
- 2 tablespoons butter
- Filling:
- 1 bunch broad-leaf green thyme (zoubaa)
- 2 cups cheese, or as needed and desired (a mix of akawi cheese, mozzarella, kashkaval, and Bulgarian cheese, or as desired)
- 1 cup dried thyme for coating
- Olive oil for brushing the top
Method
- Whisk the sugar with the yeast, yogurt, 2 cups of the liquid milk, and the egg.
- Add the oil and whisk, then add the flour, salt, and thyme gradually, kneading with the remaining milk until you get a smooth dough.
- Add the butter at the end and knead again.
- Cover the dough with plastic wrap, then with a cloth, and let it rise.
- Prepare the filling: mix the thyme with the cheese.
- Divide the dough into two portions. Roll out the first portion into a large, thin square and spread half the filling evenly over the dough, then roll it up into a log.
- Sprinkle dried thyme along the length of the roll, then cut it into evenly sized pieces as desired.
- Arrange the pieces in a tray brushed with a little oil, leaving space between them.
- Prepare the second portion of dough the same way.
- Cover the tray and let the rolls or dough pieces rest for 2 to 3 hours if the weather is cold, until the pieces puff up and rise again.Timers: 180 min
- Brush the tops of the rolls with olive oil and place the trays in a hot oven (heated from above and below) at 200°C, on the rack below the middle.
- Bake for 20 to 25 minutes, or as needed.Timers: 25 min
- Remove the thyme rolls from the oven and brush the tops immediately again with olive oil, then cover them with a cloth so they stay soft even after cooling.
