Stuffed grape leaves with meat and genarek, or sour grenak! There is no doubt that grape leaves love a tangy flavor, and genarek will do the job :)

Ingredients

  • 1 kilo green grape leaves
  • Sour genarek
  • Meat slices, such as beef steak, or as desired
  • Filling:
  • 1/2 kilo ground meat
  • 2 cups washed and drained Egyptian rice, or as desired
  • Salt, to taste
  • 1/2 teaspoon seven-spice mix
  • 1/2 teaspoon ground cardamom
  • 1/2 teaspoon sweet spice
  • A pinch of cinnamon
  • 1 tablespoon ghee
  • Broth:
  • Warm water
  • or
  • Previously prepared boiled meat broth
  • Salt
  • 1/4 cup lemon juice
  • 1/2 teaspoon turmeric
  • 1 chicken or vegetable stock cube - omit if using meat broth

Method

  1. Soak the leaves in hot water for 2 minutes until softened.
    Timers: 2 min
  2. Mix the filling ingredients, then roll the leaves.
  3. At the bottom of the pot, place slices of meat (beef steak) or as desired, and the sour genarek fruits after making slits in them with a fork.
  4. Arrange the grape leaves in the pot over the meat and genarek.
  5. Pour the broth mixture over the leaves.
  6. Place a plate in the center of the pot on top of the grape leaves so the leaves do not open while the broth later boils.
  7. After it comes to a boil, cover the pot and leave it over low heat for about 1 hour and 15 minutes, or longer if needed.
    Timers: 60 min, 15 min
  8. Note: If using meat with bones under the leaves, boil it first with the aromatics for 1.5 hours. Then place it at the bottom of the pot under the leaves and use its broth to cover the leaves.
