  • To prepare the dough:
  • 1 tablespoon butter
  • 3 tablespoons olive oil
  • 1 tablespoon sugar
  • 3 tablespoons yogurt
  • 1 teaspoon salt
  • 1 teaspoon baking powder
  • 1 teaspoon yeast
  • 1 cup water
  • 3 cups flour
  • Method for preparing the dough:
  • Ingredients for the tart filling:
  • 2 tablespoons fine semolina
  • 1 bunch fresh green spinach
  • 2 onions
  • 1 red pepper
  • 2 cloves garlic
  • 5 fresh mushrooms
  • 1 tomato
  • A pinch of nutmeg
  • A pinch of black pepper
  • 1 tablespoon pomegranate molasses
  • 1 tablespoon pepper molasses
  • Chopped walnuts
  • Salt
  • Method for preparing the spinach tart:
  • Grease the tart pan with oil and sprinkle 2 tablespoons of fine semolina. Roll out the dough in the pan, lifting the edges to fit the shape of the pan, and leave some dough aside to shape later over the filling.
  • Wash the bunch of spinach well, chop it into medium pieces, and sauté it briefly over the heat.

Method

  1. Mix the flour with all the ingredients well, knead with the water, then coat the dough with 1 tablespoon of oil, cover it, and let it rest for about half an hour.
  2. Place the spinach in a colander and squeeze out the liquid well.
  3. Sauté the onion with the pepper and garlic until they soften a little, then add the mushrooms, tomato, assorted spices, pomegranate molasses, and pepper molasses...
  4. Spread the filling over the dough with 1/4 cup feta cheese
  5. Shape the remaining dough into long twisted strips and place them over the filling lengthwise and crosswise
  6. Place the tart tray in the preheated oven on the middle rack... Leave the spinach tart in the oven until the edges brown, then turn on the top heat after brushing the strips or braids with milk or egg yolk and sprinkling sesame seeds and nigella seeds
  7. Place walnut pieces in each square between the tart braids or strips....
