Sheikh al-Mahshi with a Variety of Vegetables
Sheikh al-Mahshi is a delicious, rich homemade recipe. Although eggplant is what is meant by "Sheikh al-Mahshi," you can add many kinds of vegetables to the tray and get a paradise of tasty vegetables cooked in red sauce.
Ingredients
Start here, then move straight into the method.
- Small, slender eggplants suitable for sheikh al-mahshi
- Small potatoes suitable for stuffing
- Small tomatoes
- Note: Zucchini and globe artichokes can be prepared the same way too
- Filling
- Ground meat
- Finely chopped onion
- Seven-spice blend
- Ground cinnamon
- Salt
- Sauce or broth
- Tomato sauce
- Water
- White pepper

Method
Follow the cooking sequence without leaving the page.
- Saute the finely chopped onion in a little oil until softened
- Add the ground meat and cook over medium heat, stirring, until the meat changes color and dries out
- Add the salt and spices, mix well, then turn off the heat
- Set the filling aside and prepare the vegetables
- Peel the eggplants lengthwise, leaving half of the skin on and removing only the other half, then make a small slit lengthwise in each eggplant. Fry the eggplants in plenty of oil; when browned, remove from the oil and drain well
- Make a lengthwise slit in each zucchini, then fry and drain them as well
- Scoop out a little of the flesh from the tomatoes and set them aside without frying
- Boil the globe artichokes for about 10 minutes only, then drain wellTimers: 10 min
- Hollow out the potatoes, fry them, and drain them
- Stuff the assortment of vegetables with the meat filling prepared earlier (inside the slits made in the eggplants and zucchini), then arrange them in a baking tray
- Mix the sauce or broth ingredients and add them over the vegetables in the tray
- Place the tray on the stove. When the sauce or broth comes to a boil, cover the tray, then reduce the heat and let the broth reduce and the vegetables cook through
- Serve Sheikh al-Mahshi with white rice or rice cooked with vermicelli
