Shanklish Cheese

Ingredients

  • 4 cups yogurt
  • 1/2 cup water
  • 1 tablespoon salt
  • 1 small cup white vinegar
  • 1 spoonful of hot pepper or chili powder (to taste)
  • Thyme (to taste)

Method

Follow the cooking sequence without leaving the page.

  1. Place the yogurt on low heat after mixing it with a little water and salt...
  2. Continue stirring from time to time, and when the yogurt nears boiling add a small cup of vinegar to curdle the milk, then cover the pot and turn off the heat.
  3. When the yogurt cools, pour it into a fine cloth or cheesecloth bag to strain out the whey...
  4. Put the strained yogurt in a somewhat deep bowl, add hot chili (shatta) to taste, shape it into rounds, then place them in the sun for a full day.
  5. After one day, add dried za'atar to the shanklish rounds.
