Ingredients:

1 liter milk 1½ cups fine semolina (rava) 1½ cups sugar one sachet ground mastic 1 teaspoon orange blossom water 1 can clotted cream (qaimar) desiccated coconut nuts for garnish syrup (qatir or simple syrup) to serve, optional

Method:

Pour the milk into a pot over the heat, add the sugar and whisk with a hand whisk.
When the milk is hot, add the semolina, ground mastic and orange blossom water, stirring constantly until the mixture boils and thickens.
Pour the mixture into serving glasses or a tray and let the semolina dessert cool completely at room temperature, then refrigerate.
Before serving, spread the clotted cream on top and garnish with desiccated coconut and nuts as desired.
Serve the semolina pudding with syrup if you like.
