Ingredients
- 1 liter milk
- 1½ cups fine semolina (rava)
- 1½ cups sugar
- one sachet ground mastic
- 1 teaspoon orange blossom water
- 1 can clotted cream (qaimar)
- desiccated coconut
- nuts for garnish
- syrup (qatir or simple syrup) to serve, optional

Method
- Pour the milk into a pot over the heat.. then add the sugar and stir with a whisk
- When the milk heats, add the semolina, mastic, and orange blossom water, stirring constantly until the mixture boils and thickens
- Then pour the mixture into serving bowls or a tray and let the semolina dessert cool completely at room temperature before refrigerating
- Before serving, spread the clotted cream (qishta) on top and garnish with desiccated coconut and nuts as desired
- Serve the semolina dessert with syrup (qatir) if desired
