Ingredients
- 400 g green or frozen okra
- 200 g meat pieces
- 1 head garlic, minced
- 1 bunch fresh cilantro, finely chopped
- 2 tablespoons tomato paste
- 1 tablespoon ghee
- Salt
- Black pepper
- Dried coriander
- Hot pepper sauce - optional
Method
- Saute the minced garlic and small meat pieces in the ghee until the meat changes color and the garlic wilts
- Add the finely chopped cilantro and stir until it wilts as well
- Lower the heat and leave the pot for 10 minutes over low heatTimers: 10 min
- In the meantime, heat a little water, enough to cook the meat and okra
- When the water is hot, add it to the pot along with the tomato paste, salt, and spices, stir, cover the pot, and leave it over high heat until the water comes to a boil
- Meanwhile, fry the okra in oil. You can fry it in plenty of oil or just a little, depending on your preference
- Add the fried okra to the pot, cover, and reduce the heat
- Leave the okra stew over low heat until the meat and okra are fully cooked and the sauce thickens
- Serve the okra stew with fluffy rice and vermicelli
