Rice Halawa — a traditional homemade version that's simply delicious
Ingredients
- 1 1/4 cups short-grain Egyptian rice
- 7 cups water
- 1 1/2 cups sugar
- 5 pieces of mastic, crushed with 1 tablespoon sugar
- 1/4 tablespoon rose water
- 500 g sweet akawi cheese (well-sweetened), drained and squeezed
- syrup (qatir or shireh)

Method
- Rinse the rice and place it with water in a pot over the heat and boil it, leaving it until the water evaporates and the rice is cooked
- Crush the mastic with a spoonful of sugar and add them to the rice and stir
- Blend the hot rice in a blender until smooth and return it to the pot
- Add the sugar immediately and stir well until the sugar is completely dissolved
- Add the cheese and stir; when it fully melts, add orange blossom water, stir, then cover the pot
- Brush the serving dish with syrup and pour the rice halawa into it and garnish as desired
- Serve the rice halawa when cooled; it can also be served chilled from the refrigerator
