Rice and chicken mansaf made with a homemade recipe that will have you licking your fingers! For the best meal or the grandest feast, this mansaf fits the bill.

Ingredients:

3 cups long-grain rice

1 cup peas

1 cup chopped carrots

200 g finely ground meat

2 kg chicken

1 chicken bouillon cube

Nuts for garnish (blanched almonds, pine nuts, and cashews)

Seasonings for boiling the chicken (bay leaves, cinnamon sticks, cardamom pods, cloves...)

Salt, to taste

Ghee or oil

For browning the chicken:

Oil

Ketchup or tomato paste

A pinch of spices

Vermicelli soup:

Vermicelli

Butter

Chicken cooking broth

1 chicken bouillon cube

Preparation:

First, wash the chicken and boil it with the seasonings.
Fry the ground meat in a little ghee or oil with a pinch of spices and salt until the meat changes color.
Wash the rice well and drain it, then place it in a pot over the heat with a little of the ground meat we sautéed separately (and leave the rest for serving)... and stir.
Cover the rice with the chicken cooking broth, add the chicken bouillon cube, and stir.
Let the liquid boil until it reaches the level of the rice, then lower the heat, cover the pot, and leave the rice until cooked through.
Meanwhile, brown the boiled chicken. Brush the top with a little oil and ketchup or tomato paste and a pinch of spices (mixed together), then place it in the oven to brown.
On the side, sauté the carrots and peas in a little oil or ghee until tender.
When the rice is done, transfer it to a serving platter and arrange the peas, carrots, and ground meat over it in a circular pattern. Then top with the browned chicken and toasted nuts.
Serve the rice and chicken mansaf with laban or vermicelli soup.

Vermicelli soup method:

Brown the vermicelli in a little butter until golden.
Cover it with the chicken cooking broth, add the chicken bouillon cube, and let it simmer briefly.
