Rice and chicken mansaf made with a homemade recipe that will have you licking your fingers! For the best meal or the grandest feast, this mansaf fits the bill.

Ingredients

  • 3 cups long-grain rice
  • 1 cup peas
  • 1 cup chopped carrots
  • 200 g fine minced meat
  • 2 kg chicken
  • chicken stock cube
  • Nuts for garnish (peeled almonds, pine nuts, cashews)
  • Aromatics for boiling the chicken (bay leaves, cinnamon sticks, cardamom pods, cloves, etc.)
  • A pinch of spices, to taste
  • salt
  • ghee or oil
  • For browning the chicken:
  • oil
  • ketchup or tomato paste
  • a pinch of spices

  • vermicelli
  • butter

Method

  1. First, wash the chicken and boil it with the aromatics.
  2. Fry the minced meat in a little ghee or oil with a pinch of spices and salt until the meat changes color.
  3. Wash the rice well and drain it, then put it in a pot over the heat with a small amount of the fried minced meat (leave the rest of the meat for serving)... and stir.
  4. Cover the rice with the chicken boiling stock, add the chicken stock cube, and stir.
  5. Let the liquid boil until it reaches the level of the rice, then reduce the heat, cover the pot, and leave the rice to cook.
  6. Meanwhile, brown the boiled chicken... brush its surface with a little oil and ketchup or tomato paste and a pinch of spices (mixed together), then put it in the oven to brown.
  7. On the side... sauté the carrots and peas in a little oil or ghee until tender.
  8. When the rice is cooked, pour it into the serving platter and arrange the peas, carrots, and minced meat on top in a circular pattern, then place the browned chicken on top and garnish with toasted nuts.
  9. Serve the rice and chicken mansaf with yogurt or vermicelli soup.
  10. Fry the vermicelli in a little butter until it turns blond
  11. Pour over it some chicken boiling stock, add a chicken stock cube, and let it simmer briefly
