Ingredients
- 3 cups long-grain rice
- 1 cup peas
- 1 cup chopped carrots
- 200 g fine minced meat
- 2 kg chicken
- chicken stock cube
- Nuts for garnish (peeled almonds, pine nuts, cashews)
- Aromatics for boiling the chicken (bay leaves, cinnamon sticks, cardamom pods, cloves, etc.)
- A pinch of spices, to taste
- salt
- ghee or oil
- For browning the chicken:
- oil
- ketchup or tomato paste
- a pinch of spices

Method
- First, wash the chicken and boil it with the aromatics.
- Fry the minced meat in a little ghee or oil with a pinch of spices and salt until the meat changes color.
- Wash the rice well and drain it, then put it in a pot over the heat with a small amount of the fried minced meat (leave the rest of the meat for serving)... and stir.
- Cover the rice with the chicken boiling stock, add the chicken stock cube, and stir.
- Let the liquid boil until it reaches the level of the rice, then reduce the heat, cover the pot, and leave the rice to cook.
- Meanwhile, brown the boiled chicken... brush its surface with a little oil and ketchup or tomato paste and a pinch of spices (mixed together), then put it in the oven to brown.
- On the side... sauté the carrots and peas in a little oil or ghee until tender.
- When the rice is cooked, pour it into the serving platter and arrange the peas, carrots, and minced meat on top in a circular pattern, then place the browned chicken on top and garnish with toasted nuts.
- Serve the rice and chicken mansaf with yogurt or vermicelli soup.
- Fry the vermicelli in a little butter until it turns blond
- Pour over it some chicken boiling stock, add a chicken stock cube, and let it simmer briefly
