Pumpkin with meat and tomato ... an easy, practical dish that takes very little time compared with other stews. Serve it alongside white rice or fluffy rice, and it is also delicious with Arabic bread.

Ingredients:

1 kilo pumpkin, cut into cubes 1/2 kilo meat, cut into small pieces 2 carrots, cut into rounds rosemary - optional 1 onion, cut into wedges 4 tomatoes, grated 2 tablespoons tomato paste A pinch of nutmeg A pinch of black pepper A pinch of dried thyme or oregano Salt Oil or ghee for cooking 2 cups rice

Preparation Method:

Sauté the meat in oil or ghee with a pinch of black pepper. If the meat is not tender or fillet, we recommend boiling it beforehand.
Add the onion wedges over the meat and stir until the onion softens.
Then add the carrots and rosemary and stir for about 5 minutes.
Add the tomatoes, tomato paste, and salt to the mixture, stir, then cover the pot and let it cook over low heat for about 15 minutes.
Add the pumpkin, stir, and leave it again for about 20 minutes over low heat, or until the pumpkin is cooked.
Finally, sprinkle in the nutmeg and thyme, bring it to a boil once, and turn off the heat.
Serve the pumpkin with meat and tomato alongside white rice as a stew, or with bread and vegetables.
