Method
- Peel the pumpkin, cut it, and wash it well.
- Put the pumpkin with the starch and enough water to cover them for 4 hours. It is essential to stir the pumpkin and starch from time to time to re-suspend the starch that will settle at the bottom of the bowl.
- After the required time, wash the pumpkin well and boil it over low heat with the sugar and citric acid.
