  • 1 kilo pumpkin or squash or gourd
  • 1/2 kilo sugar
  • 1/2 teaspoon citric acid (lemon acid)
  • 1/2 cup starch
  • Water

Method

  1. Peel the pumpkin, cut it, and wash it well.
  2. Put the pumpkin with the starch and enough water to cover them for 4 hours. It is essential to stir the pumpkin and starch from time to time to re-suspend the starch that will settle at the bottom of the bowl.
  3. After the required time, wash the pumpkin well and boil it over low heat with the sugar and citric acid.
  4. Stir from time to time until the sugar has completely dissolved.
  5. Keep the pumpkin over low heat until the pieces are cooked.
