Ingredients
- 2 large potatoes, boiled and cut into cubes
- 1 cucumber, diced
- 1 tomato, diced (or cherry tomatoes)
- 1/4 small red onion, diced
- 1/4 red bell pepper, diced
- 1/4 green bell pepper, diced
- 1/4 cup sliced black olives
- 1/4 cup fresh or preserved za'atar
- Pomegranate seeds (optional)
- 3 tbsp olive oil
- Lemon juice to taste
- Salt to taste
- A pinch of paprika or sweet red pepper powder
- Parsley for garnish

Method
- Combine all ingredients in a large bowl and gently toss with a fork.
