  • Note:
  • Be sure to knead the boiled potatoes well with the powdered milk and spices so the kibbeh does not fall apart while frying. We recommend testing one potato kibbeh ball first; if it falls apart during frying, you can add two tablespoons of flour to the potato mixture to help bind it together.

Method

  1. Boil the potatoes and mash them.
  2. Mix the potatoes with powdered milk and various spices.
  3. Prepare the meat filling: sauté the onion in vegetable oil, then add the minced meat and the spices and salt and stir until the meat is cooked.
  4. Form the potato portions into circles; stuff them the same way as traditional kibbeh: place a little of the meat filling inside each hollowed circle, close it, and roll it into closed rounds.
  5. Dip the stuffed potato pieces in crushed crackers from both sides and fry them in hot oil.
  6. Fry the stuffed potato kibbeh first over high heat until the outer crust becomes firm and golden, then lower the heat so the potato cooks through inside as well...

  10. Note:
  11. It is essential to knead the boiled potatoes with the powdered milk and spices well so the kibbeh does not break apart during frying. We recommend frying one kibbeh as a test; if it falls apart during frying, you can add two tablespoons of flour to the potato mixture to help it hold together.
