Ingredients

  • 500 g (1/2 kg) boiled potatoes
  • a pinch of salt
  • a pinch of black pepper
  • 1 cup all-purpose flour
  • mozzarella cheese, cut into cubes
  • 1 cup breadcrumbs
  • 1 egg
  • For coating the croquettes:

Method

  1. Mash the boiled potatoes well, add the remaining ingredients and mix thoroughly.
  2. Form the potato mixture into balls, flatten each slightly and place a cube of cheese in the center, then seal to enclose the cheese.
  3. Dip each croquette in the beaten egg, then roll in the breadcrumbs until fully coated.
  4. Deep-fry the potato croquettes in hot oil until golden, then remove and drain on paper towels to absorb excess oil.
  5. Serve the croquettes hot.
  6. Note: Shape the potato balls to the size you prefer.
