Ma'qoud or papaya jam — easy to make, but you must have papayas first :)
Ingredients
- 1 kg green papaya, cut into cubes
- 4 tablespoons starch or lime (calcium hydroxide) (starch was used in this recipe)
- 4 cups sugar
- Juice of 1 lemon
- Note :
- If you do not use starch or lime, the cubes will not keep their shape.

Method
- Place the green papaya cubes in a large bowl, add the starch, cover with water and stir well until the starch dissolves.
- Leave the bowl aside or in the refrigerator overnight, stirring occasionally.
- On the next day wash the papaya cubes and place them in a colander to drain.
- Put them in a pot, sprinkle the sugar over them and leave for two hours aside.
- After the time has passed, put the pot on the heat and stir a little until the sugar melts.
- When it starts boiling, reduce the heat and simmer until the pieces become translucent, which indicates they are well cooked.
- Add the lemon juice and let it boil for another ten minutes, then turn off the heat and let the ma'qoud or papaya jam cool before placing it in airtight glass jars.
- When the preserve has cooled completely, seal the jars and it is best to keep them in the refrigerator after opening.
