Oven Roasted Potatoes
Ingredients
- Large or medium potatoes suitable for roasting
- A pinch of salt
- A drizzle of olive oil
- Mozzarella cheese
- Black pepper
- Fresh green parsley for garnish

Method
- Peel and wash the potatoes, then cut wide slits across each potato without cutting all the way through to the end, so the potato remains connected. A larger potato makes a better pocket for the cheese after roasting.
- If you're short on time, you can roast the potatoes right after slicing, but you can also boil them briefly (half-cooked) and remove them before they are fully tender.
- Sprinkle with a pinch of salt and drizzle with olive oil, then place in a preheated hot oven.
