Method
- Fry the okra in oil, then place it on kitchen paper to absorb excess oil; some people fry okra in plenty of oil while others prefer frying it in very little oil.
- Sauté the chopped or sliced onion in olive oil until golden.
- Add the crushed garlic and finely chopped fresh coriander, stir briefly, then add the peeled tomato cut into small cubes.
- Cook until the tomato softens well, then add tomato paste, the okra, and salt, and cook over low heat until the sauce thickens, stirring gently from time to time because the okra should not be stirred vigorously so the pods do not open and to preserve the attractive appearance of the dish.
- Serve the okra with oil at room temperature or chilled from the refrigerator.
