Ingredients

  • 2 kg chicken, or as desired
  • about 6 garlic cloves
  • 2 onions
  • 2 tablespoons tomato paste
  • 1 tablespoon mustard
  • a pinch of chicken seasoning
  • a pinch of mahalab
  • a pinch of ground cinnamon
  • a pinch of ground cardamom
  • 2 tablespoons yogurt
  • 1 tablespoon apple cider vinegar
  • 1 tablespoon white vinegar
  • salt
  • 1 teaspoon black pepper
  • hot pepper or chili, to taste

Method

  1. Wash the chicken well and rub it with tahini, white vinegar, and salt. Rinse the chicken pieces again and place them in a colander for a while.
  2. Crush the garlic and chop the onion, mix all the marinade ingredients and put the chicken pieces in it for a full night.
  3. The next day, place the marinated chicken pieces in a large ovenproof baking tray with potatoes and carrots cut as desired.
  4. Roast the chicken and vegetables in a preheated oven at 200°C until the chicken is completely cooked.
