Oat cakes with molasses... a tried-and-true homemade recipe for delicious, healthy oat cakes sweetened with natural molasses.

Ingredients

  • 5 cups oat flour (or finely ground oats)
  • 1 cup whole wheat flour
  • 1 tablespoon powdered milk
  • 1 tablespoon yeast
  • 1 teaspoon baking soda
  • 1 cup butter at room temperature or 1 cup coconut oil
  • 1/2 cup toasted sesame seeds
  • 1/2 cup whole anise seeds
  • 2 tablespoons kahk (cookie) spice blend
  • 2 cups carob molasses or any molasses
  • Water as needed to bring the dough together

Method

  1. Knead all the ingredients together well until you have a smooth dough.
  2. Let it rest for half an hour.
  3. Shape it using cookie molds.
  4. Place the discs on a baking tray lined with parchment paper.
  5. Bake at 180°C until the cookies are cooked and take on a nice color.
  6. Serve after they cool to room temperature.
