Mixed Vegetable Stew

Mixed vegetable stew is a super tasty dish served with rice or Arabic bread. It can be made vegetarian, or you can add pieces of meat to turn it into a vegetable stew.

Ingredients

  • Half a kilo zucchini
  • Half a kilo eggplant
  • Half a kilo green beans
  • Half a kilo okra, trimmed, washed, and pre-fried halfway
  • 1.5 kilos ripe red tomatoes
  • 2 large onions
  • 2 tablespoons tomato paste (optional)
  • 1 tablespoon hot pepper paste (optional)
  • 1/4 cup cooking oil (vegetable oil + olive oil)
  • Salt, to taste
  • Note: Potatoes, cut into cubes, can be added - optional

Method

Follow the cooking sequence without leaving the page.

  1. First, cut the zucchini and eggplant into medium cubes.
  2. Peel the tomatoes and chop them into medium cubes.
  3. Finely chop the onion and sauté it in the oil in a pot over the heat.
  4. When the onion turns golden, add the chopped green beans and stir until they are about three-quarters cooked.
  5. Then add the zucchini, eggplant, tomatoes, tomato paste, hot pepper paste, and salt, along with half a cup of water.
  6. Cover the pot and let them boil over medium heat until cooked.
  7. When the vegetables are done, add the pre-prepared okra and let everything boil together for just 5 minutes, then turn off the heat.
