Mixed Vegetable Stew
Mixed vegetable stew is a super tasty dish served with rice or Arabic bread. It can be made vegetarian, or you can add pieces of meat to turn it into a vegetable stew.
Ingredients

- Half a kilo zucchini
- Half a kilo eggplant
- Half a kilo green beans
- Half a kilo okra, trimmed, washed, and pre-fried halfway
- 1.5 kilos ripe red tomatoes
- 2 large onions
- 2 tablespoons tomato paste (optional)
- 1 tablespoon hot pepper paste (optional)
- 1/4 cup cooking oil (vegetable oil + olive oil)
- Salt, to taste
- Note: Potatoes, cut into cubes, can be added - optional
Method
Follow the cooking sequence without leaving the page.
- First, cut the zucchini and eggplant into medium cubes.
- Peel the tomatoes and chop them into medium cubes.
- Finely chop the onion and sauté it in the oil in a pot over the heat.
- When the onion turns golden, add the chopped green beans and stir until they are about three-quarters cooked.
- Then add the zucchini, eggplant, tomatoes, tomato paste, hot pepper paste, and salt, along with half a cup of water.
- Cover the pot and let them boil over medium heat until cooked.
- When the vegetables are done, add the pre-prepared okra and let everything boil together for just 5 minutes, then turn off the heat.Timers: 5 min
