Ingredients

  • 1 large onion, cut into wedges
  • 1 green hot pepper — optional
  • Green bell pepper, diced
  • Carrots, diced
  • Potatoes, diced
  • Eggplant, diced
  • Zucchini, diced
  • 1 large tomato, diced small
  • 1 tbsp tomato paste
  • 1 tbsp sweet pepper paste
  • Salt
  • A pinch black pepper
  • A pinch dried coriander
  • A pinch paprika or sweet red pepper powder
  • A pinch seven-spice blend
  • Olive oil

Method

  1. Put a little olive oil in a wide skillet or a nonstick pan and begin frying the onion until it softens.
  2. When the onion softens, add the sweet and hot peppers and stir.
  3. Add the remaining vegetables, starting with the toughest, like carrots, and ending with eggplant since it doesn't need much time to cook; as each vegetable begins to wilt, add the next one.
  4. Reduce the heat and cover the vegetables.
  5. After a while, add the chopped tomatoes with salt, spices, and dried coriander, and stir.
  6. Add the tomato paste dissolved in one cup of water and the pepper paste.
  7. Cover the mixed vegetables and let them cook over low heat until done.
