Ingredients
- 1 large onion, cut into wedges
- 1 green hot pepper — optional
- Green bell pepper, diced
- Carrots, diced
- Potatoes, diced
- Eggplant, diced
- Zucchini, diced
- 1 large tomato, diced small
- 1 tbsp tomato paste
- 1 tbsp sweet pepper paste
- Salt
- A pinch black pepper
- A pinch dried coriander
- A pinch paprika or sweet red pepper powder
- A pinch seven-spice blend

Method
- Put a little olive oil in a wide skillet or a nonstick pan and begin frying the onion until it softens.
- When the onion softens, add the sweet and hot peppers and stir.
- Add the remaining vegetables, starting with the toughest, like carrots, and ending with eggplant since it doesn't need much time to cook; as each vegetable begins to wilt, add the next one.
- Reduce the heat and cover the vegetables.
- After a while, add the chopped tomatoes with salt, spices, and dried coriander, and stir.
- Add the tomato paste dissolved in one cup of water and the pepper paste.
- Cover the mixed vegetables and let them cook over low heat until done.
