Home-style vegetable manzala — very tasty

Ingredients

  • 500 g meat, cut into very small pieces
  • 2 large eggplants, cut into cubes
  • 1 zucchini, cut into cubes
  • 1 green bell pepper, chopped
  • 1 red bell pepper, chopped
  • 1 medium potato, chopped
  • 1 ripe tomato, chopped or grated
  • 1 large onion, sliced
  • 1 clove garlic, finely chopped
  • 2 tablespoons tomato paste mixed with 1/2 cup water
  • 2 bay leaves
  • 1/2 teaspoon ground ginger or 1/2 teaspoon freshly grated ginger
  • Pinch of black pepper
  • 1 teaspoon hot pepper (chili), or to taste
  • Oil
  • Salt to taste

Method

  1. Heat a little oil in a pot over medium-high heat. Add the meat with a little salt and stir until the meat is cooked.
  2. Add the onion and garlic and sauté briefly until they soften.
  3. Add the remaining ingredients and stir well; adjust the salt if needed.
  4. After a short while, add the tomato paste mixed with the water, then cover the pot and leave it over high heat until the liquid comes to a boil
  5. Sprinkle the spices and toss gently so the vegetables keep their shape. Reduce the heat and leave the vegetable manzala with meat to simmer until everything is tender.
