Ingredients

  • 1 large eggplant, suitable for cooking
  • 2 dried onions
  • 4 cloves garlic
  • 1 cup cooked chickpeas
  • 2 tomatoes
  • 1 tablespoon tomato paste
  • 1 teaspoon dried mint
  • Salt and pepper to taste

Method

  1. Fry the eggplant after peeling and cutting it into pieces. Fry it in hot oil, and once cooked, set it aside on paper towels to absorb the oil.
  2. Cut the onion into rings and fry it with the garlic in a deep pot for a short while, then add the peeled, chopped tomatoes and mix everything together.
  3. Add water, tomato sauce, salt, dried mint, and the cooked chickpeas.
  4. When it comes to a boil and the sauce thickens slightly, add the eggplant and let everything boil together for a little while...
  5. Remove the mghmour from the heat and serve it in serving dishes...
