  • Potatoes
  • Oil
  • Salt
  • Pepper or white pepper
  • Butter
  • Milk
  • Green onion
  • Canned corn

Method

  1. Wash the potatoes and dry them well on the outside, then brush them with oil and salt and bake them in a preheated oven until fully cooked.
  2. Let them cool, then cut the potatoes lengthwise with a knife.
  3. Using a spoon, scoop out the baked potato flesh, keeping the skins intact so you can return the filling to them later.
  4. Mash the scooped-out potato with a fork, then add a knob of butter, a little warm milk, salt, white pepper, corn, and finely chopped green onion, and mix well.
  5. Fill the potato skins with the mashed potato mixture and top with mozzarella, then sprinkle with paprika and oregano.
  6. Place the potatoes under the oven grill until browned and the cheese melts.
