- Marinated chicken:
- Chicken breasts
- 1 teaspoon salt
- 1 medium onion, very finely chopped
- 3 teaspoons paprika or ground sweet red pepper
- 1 teaspoon black pepper
- 1/2 teaspoon hot red pepper or chili
- 4 tablespoons vegetable oil
- Seasoned rice
- 3 tablespoons olive oil
- 1 onion, finely chopped
- 3 cloves garlic, crushed
- 1 green bell pepper, finely chopped
- 1 teaspoon hot red pepper or chili
- 1 teaspoon ground cumin
- 1 teaspoon ground cinnamon
- 1 cup long-grain American rice
- 2 cups water or chicken stock
- 2 tablespoons lemon juice
- 1/4 cup chopped fresh cilantro
- 1 (310 g) can of corn, rinsed and drained
- 1 (420 g) can of beans, rinsed and drained

Method
- Mix the salt, spices and oil in a medium bowl.
- Coat the chicken breasts with the spice mixture until well covered.
- Arrange the breasts in a single layer in an oiled baking tray and roast in the oven for about 45 minutes or until fully cooked.Timers: 45 min
- Let the chicken rest for about 5 minutes, then slice into thick pieces.Timers: 5 min
- Add the bell pepper and spices and continue cooking until fragrant.
- Add the rice and stir well, then add the water or stock and bring the mixture to a boil.
- Reduce the heat, cover the pot and cook the rice for 15 minutes.Timers: 15 min
- Add the remaining ingredients and remove from the heat once the rice is cooked.
