  • Marinated chicken:
  • Chicken breasts
  • 1 teaspoon salt
  • 1 medium onion, very finely chopped
  • 3 teaspoons paprika or ground sweet red pepper
  • 1 teaspoon black pepper
  • 1/2 teaspoon hot red pepper or chili
  • 4 tablespoons vegetable oil
  • Seasoned rice
  • 3 tablespoons olive oil
  • 1 onion, finely chopped
  • 3 cloves garlic, crushed
  • 1 green bell pepper, finely chopped
  • 1 teaspoon hot red pepper or chili
  • 1 teaspoon ground cumin
  • 1 teaspoon ground cinnamon
  • 1 cup long-grain American rice
  • 2 cups water or chicken stock
  • 2 tablespoons lemon juice
  • 1/4 cup chopped fresh cilantro
  • 1 (310 g) can of corn, rinsed and drained
  • 1 (420 g) can of beans, rinsed and drained

Method

  1. Mix the salt, spices and oil in a medium bowl.
  2. Coat the chicken breasts with the spice mixture until well covered.
  3. Arrange the breasts in a single layer in an oiled baking tray and roast in the oven for about 45 minutes or until fully cooked.

  4. Let the chicken rest for about 5 minutes, then slice into thick pieces.

  5. Add the bell pepper and spices and continue cooking until fragrant.
  6. Add the rice and stir well, then add the water or stock and bring the mixture to a boil.
  7. Reduce the heat, cover the pot and cook the rice for 15 minutes.

  8. Add the remaining ingredients and remove from the heat once the rice is cooked.
