Method
- Start by boiling the bone-in shank meat with the aromatics.
- Leave the meat over low heat for 2 hours until well cooked... we will also use the broth to cook the rice.Timers: 120 min
- In a second pot, start preparing the rice... sauté the minced meat in a little ghee with the spices until it changes color, then add the bouillon cube and stir well.
- When the bouillon cube dissolves, add the washed and well-drained rice and stir over low heat until the rice is lightly toasted and absorbs the ghee.
- Add the broth from cooking the meat over the rice at a ratio of 2 cups of broth for every 1 cup of long-grain rice. Adjust the salt and spices, stir, and leave the pot over high heat until the broth comes to a boil.
- Reduce the heat when the broth reaches the level of the rice... drizzle ghee over the top, cover the pot for 20 minutes, or until done.Timers: 20 min
- Meanwhile, place the bone-in meat in a baking tray, brush it with ghee, and brown it.
- Transfer the rice to a large serving platter, arrange the meat on top, and garnish with fried nuts.
