Ingredients
Start here, then move straight into the method.
- Filling
- 4 medium tomatoes
- 3 large onions
- 5 cloves garlic
- 1 tablespoon salt or to taste
- 1 tablespoon pepper molasses or pepper paste

- 1 tablespoon tomato paste
- 1 teaspoon black pepper
- 1 tablespoon paprika or sweet red pepper powder
- 2 tablespoons pomegranate molasses
- 1/3 cup olive oil

- 1 tablespoon sugar
- 1 tablespoon hot pepper paste, or to taste
- 1 cup water
- Dough
- 1 1/2 cups warm water
- 1 tablespoon granulated sugar
- 1 tablespoon fresh baker's yeast or 20 g
- 1 tablespoon salt or to taste
- 1/2 cup yogurt
- 5 cups all-purpose flour, or adjust according to the flour's type and absorption
- 1/4 cup vegetable oil

Method
Follow the cooking sequence without leaving the page.
- Combine all the spices with the tomato paste, pepper paste and sugar; mix well, then add the water and stir.
- Place the mixture in the fridge for 1 hour.Timers: 60 min
- In a pot, heat the oil and sauté the chopped onions and garlic until softened.
- Add the chopped tomatoes and bell pepper and cook until tender.
- Take the chilled mixture from the fridge and add it to the pot, then add the pomegranate molasses and salt to taste; stir. Keep the pot over low heat until the mixture thickens and is ready.
- Turn off the heat. To smoke the muhammara mixture, place a lit charcoal in a small cup or on a piece of aluminum foil with a spoon of oil, put it in the pot and close the lid for about 5 minutes.Timers: 5 min
- Let the mixture cool before spreading it on the dough.
- Divide the risen dough or shape it into medium discs, roll each into a circle and spread the muhammara filling on top.
- Bake until browned on the bottom and serve hot.
- Mix the sugar, yeast and water and stir, then add 1 1/2 cups of flour and mix.
- Cover and let it proof for about 15 minutes.Timers: 15 min
- Then add the yogurt, salt and the rest of the flour and knead well; finally add the oil and continue kneading until you get a soft dough.
- Cover the muhammara manaqeesh dough and let it rest for 10 minutes before working with it.Timers: 10 min
