Ingredients
Start here, then move straight into the method.
- Pieces of meat or lamb shanks
- Rice
- Eggplant
- Cauliflower
- Carrot
- Potato
- Onion (dry)
- 1 tomato
- Sweet green pepper
- Garlic
- Mixed spices to taste
- Salt
- Maqluba spice
- Nuts for garnish
Method
Follow the cooking sequence without leaving the page.
- Boil the pieces of meat with aromatics and set them aside
- Cut the eggplant, carrot, potatoes, and peppers into slices or rounds, and fry them — along with the cauliflower — each type separately
- Place them in a colander and let them drain of oil as much as possible
- Slice the onion and tomato and leave them raw
- Arrange the meat pieces in the bottom of the pot, then a layer of vegetables over them, then a layer of washed and drained rice
- Repeat layering in the same way until all the vegetables, meat, and rice are used up
- In a bowl, measure water at a rate of 1 and a half cups for each cup of rice; add salt and spices and stir
- Pour the water over the pot
- Place the pot over medium heat until the water boils for three or four minutes, then leave it on low heat until the rice cooks — the rice needs about 20 minutesTimers: 20 min
- Turn off the heat and leave the pot covered on the stove for about 10 minutes before inverting itTimers: 10 min
- Garnish the beef maqluba with vegetables with nuts as desired and serve
- Serve yogurt with garlic or a salad alongside the maqluba
- Note: You can add ground meat with the rice
