  • 1 1/2 cups semolina
  • 1 cup all-purpose flour
  • 1/4 cup vegetable oil
  • 1 teaspoon yeast
  • 1 teaspoon ground anise
  • 1/2 teaspoon baking powder
  • 1/2 teaspoon mahlab
  • 1/4 cup water
  • Ingredients and method for preparing the syrup (attar):
  • 2 cups sugar
  • 1 cup water
  • 1 tablespoon lemon juice
  • 1 tablespoon orange blossom water

Method

  1. Mix all ingredients and knead well until you get a cohesive dough. Add water as needed for the dough.
  2. Shape the dough into small balls. Pass the balls through a plastic sieve and roll them into finger shapes.
  3. Let Zeinab fingers rest for about half an hour. Pour plenty of vegetable oil into a deep pot and fry the fingers until golden brown.
  4. Remove the fried Zeinab fingers from the hot oil and dip them immediately into syrup.
  5. Combine sugar and water; when it boils, add lemon juice, then rosewater..
