- 1 teaspoon mahleb
- 1 teaspoon finely ground anise
- 1 teaspoon baking powder
- A pinch of yeast
- 1/2 cup orange blossom water
- 1 cup yogurt
- The date filling:
- Pitted dates are kneaded with a little butter, orange blossom water, rose water, finely ground anise, and a pinch of ground ginger.
- Divide the dough into two halves. Roll out the first half in a buttered tray and spread the dates over it. With the second half of the dough, take small pieces, flatten them by hand, and place them in the tray until the dough is used up. Then make sure to fill the gaps by wetting your hand with water and smoothing the surface of the dough...
- Cut the maamoul mad with a sharp knife, wetting the knife with water so it does not stick. Bake it in the oven, starting from the bottom until it turns golden, then remove the tray from the oven and brush the top of the maamoul with syrup, and brown it from the top.
