Ingredients
- 2 cups fine semolina
- 2 cups coarse semolina
- 1 cup ghee
- 1/2 cup liquid milk
- 2 tablespoons orange blossom water
- 1 cup sugar
- 1 tablespoon baking powder
- 1 teaspoon instant yeast
- A pinch of salt
- Ingredients for the ashta or cream filling:
- 1 liter liquid milk
- 6 tablespoons cornstarch
- 4 tablespoons sugar

Method
- Mix the semolina, sugar, baking powder, yeast, orange blossom water, and salt with the ghee...
- Knead the ingredients with the ghee and mix well, then gradually add the liquid milk to the dough until you get a smooth dough.
- Set the maamoul dough aside to rest for about two hours.
- After the resting time, divide the dough into two parts. Place the first part in an oven-safe baking tray, then spread the ashta or cream over it..
- Roll out the second part of the maamoul dough on a sheet of plastic wrap and place it in the fridge for about 10 minutes.Timers: 10 min
- Then take out the second part of the dough from the fridge and place it over the ashta in the maamoul tray. You will have a layer of maamoul dough, then the ashta, then a third layer of maamoul dough.
- Place the tray in the oven for about 25 minutes at 180 degrees, or until the semolina is cooked, depending on your oven.Timers: 25 min
