Loubia with bulgur is a dish from southern Lebanon. Ingredients

  • Half a kilo (500 g) fine green beans, trimmed and washed
  • 1 large dry onion, chopped
  • Vegetable oil
  • 3 large ripe tomatoes, chopped
  • 1 cup coarse brown bulgur
  • 1 cup hot water
  • Salt
  • Hot pepper to taste

Method

  1. In a pot, sauté the chopped onion in oil until it turns slightly golden
  2. Add the trimmed and washed green beans and sauté, cover the pot and stir every so often
  3. When the green beans soften, add the chopped tomato and stir a little
  4. When the tomato softens, add hot water and the bulgur
  5. Cover the pot again and leave it over medium heat until the green beans with bulgur are cooked — bulgur usually needs 15 to 20 minutes
