Ingredients
- 1 cup (100 g) almond flour
- 1 cup + 1 tablespoon (100 g) rice flour or almond flour
- 10 dates, cut into small pieces
- 2 eggs
- 1 teaspoon vanilla
- 1/2 cup + 1 teaspoon (100 ml) coconut milk or skim milk
- 1 tablespoon honey (optional)
- Blueberries (fresh or frozen, whichever you have)
- 1 teaspoon baking powder
- A pinch of salt
Method
- In a bowl combine both types of flour with the salt and baking powder and stir well.
- In another bowl whisk the eggs with the vanilla and honey well using a whisk.
- Add the milk to the egg mixture and continue whisking the mixture.
- Add the dates to the eggs and then add the flour mixture and whisk again.
- Add the washed blueberries and gently fold them in with a wooden spoon.
- Pour the blueberry cake batter into a square pan lined with parchment paper.
- Place the light blueberry cake pan in the preheated oven at 180°C for about 15 to 20 minutes or until cooked, depending on oven strength.Timers: 20 min
