Ingredients
- Coarsely chopped lettuce
- Pre-cooked beetroot, sliced (or canned)
- Avocado, pitted and cut into cubes or slices
- Grated carrot for garnish
- Dressing:
- Garlic
- Lemon juice
- Oil (olive oil works well)
- Salt

Method
- In the serving bowl, spread the chopped lettuce and top it with avocado slices and beet pieces
- In a small bowl, mix the dressing ingredients
- Drizzle the dressing over the salad without tossing, garnish with carrot or as desired... then serve immediately
