- Peel the lemons with a potato peeler to get thin strips free of the white layer, meaning the white pith of the lemon.
- Spread the peels on a tray and place them in the open air in a place away from direct sunlight. Leave them for enough time, which may take several days, until they are completely dry.
- Once we are sure they are fully dried, grind them in an electric grinder to obtain lemon zest powder.
- Note: We recommend using lemon zest powder in all kinds of cakes, crème pâtissière, grilled chicken seasoning, and kabsa rice.
