Lemon cake is one of the tastiest homemade cakes, and it’s especially good with tea.
Ingredients
- 6 eggs, at room temperature
- 4 cups flour, sifted twice
- 2 cups sugar
- 2 tablespoons baking powder
- Lemon zest
- 2 tablespoons milk powder
- 1 1/4 cups vegetable oil
- 1 cup natural orange juice
- 1 teaspoon white vinegar
- 2 teaspoons vanilla
- 1 tablespoon cocoa powder
Method
- Beat the eggs for 3 minutes, then add the sugar, the vinegar, and the vanilla, and continue beating until the mixture lightens in color.
- Add the oil and orange juice and beat.
- In a bowl put the dry ingredients (except the cocoa), pour the liquid mixture over them and mix.
- Preheat the oven to 170°C.
- Grease the cake pan with oil and pour in half of the batter.
- Mix the second half with the cocoa, then pour it over the first layer in the pan.
- Place the cake pan on the middle rack and bake from the bottom for 40–45 minutes, then from the top for just 5 minutes to brown.
- Let it rest and cool at room temperature before turning it out and serving.
