Ingredients

  • 1 kg ground meat
  • 2 large onions
  • 4 garlic cloves
  • 1 teaspoon sweet spice
  • salt to taste
  • ½ cup fine ka'ak crumbs or breadcrumbs
  • 2 tablespoons tomato paste
  • 1 kg cauliflower
  • 2 large potatoes
  • The kofta with cauliflower recipe comes from a friend on the Sho Tabkhin Today website:
  • Ola Madi

Method

  1. Mix the meat with a finely chopped onion, the ka'ak crumbs, a little spice and salt. When the mixture comes together, form it into small balls.
  2. Grill the kofta in the oven or fry them in a little oil for just a few minutes until the pink color disappears.
  3. In a pot on the stove, sauté a finely chopped onion with chopped garlic in a little oil until they soften.
  4. Add the kofta balls, tomato paste, salt, sweet spice, and water, and let them simmer.
  5. Meanwhile, roast the cut potatoes in the oven. Also boil the cauliflower in water with a little salt. When the water boils, drain the cauliflower, drizzle with olive oil, and roast it in the oven as well.
  6. Add the vegetables on top of the kofta stew and leave the pot on low heat until the sauce thickens and the ingredients are well cooked.
  7. Serve rice alongside the kofta with cauliflower.
