Kofta and Rice — a delicious homemade recipe!

Ingredients

  • 500 g minced meat (½ kilo)
  • 2 dry onions
  • 1 bunch fresh parsley
  • Salt
  • Black pepper
  • Kofta Sauce:
  • 5 fresh tomatoes
  • 1 dry onion
  • 1 clove garlic, crushed
  • Fresh grated ginger
  • Grated dried lime (loomi)
  • 1 tablespoon pepper paste
  • 1 tablespoon tomato paste

Method

  1. Finely chop the dry onions and add them to the minced meat.
  2. Also add the finely chopped parsley and mix well with the meat and onion.
  3. Season with salt, black pepper (or seven-spice mix) and ground cinnamon, and mix the ingredients thoroughly.
  4. Form the meat into balls or rounds in the size you prefer.
  5. Place the rounds in a skillet over heat and brown them for a few minutes on each side. You only need to sear them—not cook them through.
  6. Begin preparing the tomato sauce: puree the tomatoes in a blender and add the fried chopped onion, garlic and the spices.
  7. Add the pepper paste and tomato paste and mix well into the fresh sauce.
  8. You may add water depending on the sauce consistency and your preference.
  9. Pour the sauce over the meat rounds and cook the kofta in a baking dish in the oven or on the stovetop until the sauce thickens and the meat is fully cooked.
  10. Kofta can be served with white rice or spaghetti, according to your preference.
