Kofta and Rice — a delicious homemade recipe!
Ingredients
- 500 g minced meat (½ kilo)
- 2 dry onions
- 1 bunch fresh parsley
- Salt
- Black pepper
- Kofta Sauce:
- 5 fresh tomatoes
- 1 dry onion
- 1 clove garlic, crushed
- Fresh grated ginger
- Grated dried lime (loomi)
- 1 tablespoon pepper paste
- 1 tablespoon tomato paste

Method
- Finely chop the dry onions and add them to the minced meat.
- Also add the finely chopped parsley and mix well with the meat and onion.
- Season with salt, black pepper (or seven-spice mix) and ground cinnamon, and mix the ingredients thoroughly.
- Form the meat into balls or rounds in the size you prefer.
- Place the rounds in a skillet over heat and brown them for a few minutes on each side. You only need to sear them—not cook them through.
- Begin preparing the tomato sauce: puree the tomatoes in a blender and add the fried chopped onion, garlic and the spices.
- Add the pepper paste and tomato paste and mix well into the fresh sauce.
- You may add water depending on the sauce consistency and your preference.
- Pour the sauce over the meat rounds and cook the kofta in a baking dish in the oven or on the stovetop until the sauce thickens and the meat is fully cooked.
- Kofta can be served with white rice or spaghetti, according to your preference.
