Kofta and potatoes with rice — a traditional, very tasty recipe loved by adults and children
Ingredients
- Half a kilo of kofta (minced meat patties)
- 5 potatoes
- 2 tomatoes
- 2 tbsp tomato paste
- A pinch of seven‑spice mix
- Salt
- 1 tbsp butter

Method
- Form the kofta into small patties and slice the peeled and washed potatoes into rounds.
- Place the kofta in a baking dish, layer the potato slices on top, then add tomato slices and sprinkle the spices over the vegetables.
- Dissolve the tomato paste and salt in water and pour over the dish so the liquid covers the meat and vegetables.
- Place the dish on the stove. When it comes to a boil, add slices of butter over the top and simmer over medium heat until everything is cooked through, being careful not to overcook so the potatoes hold their shape.
- Serve the kofta and potatoes from the dish alongside fluffy vermicelli rice or plain rice.
